Matcha Oatmeal Muffins

Matcha is trending right now, and for good reason. Its floral yet earthy flavor adds fantastic depth to any recipe.  Since I am a huge lover of all things breakfast, I wanted to find another way to add matcha to my mornings.  These muffins are super easy to make and much healthier than a traditional muffin. I use gluten-free flour, but regular flour (or even whole wheat) can be used as well. It has oatmeal that fills you up and no processed sugar! I recommend using honey or maple syrup.

When it comes to matcha, I recommend getting one that is organic. You don’t need the “ceremonial grade” matcha that is used for matcha lattes. Just grab one that is good quality.

I like to top these with extra oats and a little coconut sugar for crunch. These are best hot and fresh from the oven.

No matcha? No problem. You can leave the matcha out if you want. When I am making these for the kids I leave out the matcha and add in chocolate chips.

Green Snack Board

A green snack board 💚💚💚 no food coloring necessary. My kids are “starving” at any given point in the day, and snack boards are my favorite way to provide them with various snack options. I always throw in healthy food, and they seem to enjoy it more when it’s displayed in a really fun way.

The key to a pretty board is placement. I always add a variety of flavors and textures. To make this St. Patrick’s friendly, I obviously, went with a green theme. The monochromatic board turned out to be really pretty. Remember, snack board are not just of kids. If you are getting a group together for the holiday, this is a crowd-pleaser, no matter the age group!

Snack boards are the solution to just about every problem! My kids come home “starving” every day, and they always get really excited when I pull out something fun like this rainbow snack board 🌈🌈🌈

I know snack boards can look like a lot of work, but the truth is, I just cut up some fruit and veggies, and lined them up in rainbow colors, literally, that’s it! I love this idea for St. Patrick’s Day! Quick, easy, and no more complaining! Mix it up and use whatever veggies and fruit you and your family like!
