Green Pasta
Compared to other holidays, St. Patrick's Day is really no-frills.... just drink, eat, and make everything green! This is a no-frills kind of pasta. I used one of my
,
, then paired it with spinach and gluten-free pasta. It's a healthy addition to your green beer consumption!
Here's what you need:
Pasta- for this I like Fusilli
Spinach
Parmesan Cheese (optional)
*Either make the pesto fresh (
) or if you had it frozen you can slowly heat it up on the stove with some more olive oil.
*Bring a pot of water to a boil and add in a handful of salt
*Add the pasta and cook until al dente
*Before draining the pasta save a little bit of the pasta water in a separate cup
*Drain the pasta, but DO NOT rinse
*Place the pasta back into the pan and add in as much pesto as you would like
*When the pasta is hot add in a handful of spinach
*Add a bit of the pasta water to loosen up the pesto so that it can evenly distribute if needed
*Serve with an extra sprinkle of parmesan cheese if you feel up to it!
