Another great thing about this chili is that you can adjust the recipe to make it your own.  If you don't like turkey you could do ground beef or chicken.  Leave out spices you don't like and add ones in that you do.  It's just that simple.

This chili is great the day you make it, but it's even better the next day! If there is any left over make sure to freeze it for a rainy day.

Healthy Turkey Chili

Ingredients

  • 2 tablespoons butter (or olive oil)

  • 1 red onion, chopped

  • 2 large celery stalks, chopped

  • 1 14.5 oz vegetable broth (or chicken)

  • 2 14.5 oz cans diced tomatoes

  • 1 cup water

  • 2 15 oz cans tomato sauce

  • 2 tablespoons chili powder

  • 2 tablespoons garlic powder

  • 1 tablespoon cumin

  • 1 tablespoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon cayenne pepper

  • 1 15 oz can kidney beans, drained and rinsed

  • 1 12 oz can whole kernel corn, drained and rinsed

  • 2-3 pounds organic ground turkey

Instructions

  1. *Cook the turkey meat (or whatever meat you are using) in a separate skillet. Make sure to drain the meat as well.

  2. *In a large heavy saucepan melt the butter (or olive oil) over medium heat

  3. *Add the onion and celery. Sprinkle with a little salt.

  4. *Saute until softened, about 5 minutes

  5. *In a small bowl, combine all of the spices together

  6. *Add the spice mixture to the softened onion and celery

  7. *Stir and cook until aromatic; about a minute

  8. *Add broth, tomatoes, water, and tomato sauce

  9. *Mix in beans, corn, and meat

  10. *Bring mixture just to a boil

  11. *Reduce heat to medium-low and simmer for about 30 minutes

  12. *Season with salt, pepper, and any additional spices if you would like
