We have hit the terrible two's a little early! My son is 19 months and is all about his independence. The baby who loved every kind of healthy food I put in front of him (except for watermelon...who doesn't like watermelon?) is now a toddler practicing extreme independence. At this age he is so fun because he does the funniest things, he says the funniest things, and he just loves life! The other side to that includes the tantrums and independent decision making. He wants what he wants when he wants it! Some days mac and cheese is the best thing ever and the next day he hates it. It's a true test of patience since the good surpasses the bad, but meal time has become a battleground for control. I'm up for the fight 90% of the time.  At the bare bones of it all...he needs good nutrition, so how do I deliver? It is, after all, my responsibility.

One day on our walk I stopped to get a smoothie that had kale, spinach, pineapple, and coconut water in it. Since he always wants to eat things that aren't his, I offered him a sip.  He LOVED it! Right there the bell went off! Smoothies! Why didn't I think of this sooner? Believe me, the next morning I was determined to start his day with something green.

For this particular smoothie you don't have to worry so much about exact measurement or even exact ingredients.  It's all about changing it up to be the way you and you kids like it. I really wanted to share this idea with other parents, because your child has to drink milk anyways...why not make it more fun for them and secretly give yourself reassurance knowing that you are giving them much needed nutrition. It's a perfect way to fit some greens into their morning.

Spinach For Breakfast-Strawberry and Spinach Smoothie

If you are using primarily frozen fruit, then you may not need as much ice. I like having fruit in the freezer, because then you don't have to worry about it going bad, it's readily available, and it can save you money. DO NOT used fruit that has been sitting in a can or container filled with sugar.

Ingredients

  • 1/2 cup spinach and/or kale

  • 1/2 banana

  • 1/4 cup frozen or fresh strawberries

  • 1/4 cup frozen or fresh blueberries

  • 1/4 cup chopped pineapple; optional

  • handful of ice

  • about a 1/2 cup to 1 cup milk or liquid of choice

Instructions

  1. *Place everything in a blender

  2. *Blend until smooth

  3. *If it's not blending smoothly add more liquid

  4. *If you are using all fresh fruit, make sure to add enough ice otherwise it will look more like a juice
