Frankenstein Rice Krispie Treats
How cute are these little guys? For some reason, this year I have been into Frankenstein everything. I saw some different ways people have done something similar to this on Pinterest, but I wanted to do it with my recipe!
If you haven't tried making my recipe for homemade marshmallows, now is the perfect time! They are made with honey instead of corn syrup, which makes for a wonderful floral taste, instead of an overly sweet taste. It makes enough for two batches of rice krispie treats, AND they are great to store in the freezer. I like to make the marshmallows extra gourmet with either vanilla beans or vanilla extract (recipe here). You will never want rice krispies any other way.
I never thought I would say this, but chocolate covered rice krispies are to die for! I simply dipped the top of the krispie into some dark, candy coating chocolate, to create the "hair" on Frankenstein. I use candy coating instead of regular, because it hardens nicely. Regular chocolate can be used, but it will remain soft, and could release some beads of wetness. This happens with the release of oils in the chocolate due to temperature changes, etc.
The very last addition, the eyes! I was at Michael's and couldn't help myself. They do carry larger candy eyes, but I thought there was something really sweet about the tiny eyes on the big, green, Frankenstein head!
A few tips for Frankenstein Rice Krispie Treats:
*If you are using homemade marshmallows, they don't set up as quickly! Make sure to allow enough time for them to set up, and don't worry, they will set up.
*Use cooking spray and butter on your hands to press the krispies into the pan to prevent the marshmallows from sticking to your hands.
*Once you cut out the rectangles, use the side that was facing down in the pan as the face. It will be smoother.
*Don't worry if these aren't perfect. To be honest, I wanted them to be a little bit more perfect, but I think they turned out cute anyway!

Ingredients
10 oz marshmallows; for a homemade recipe search "marshmallows" on www.FromScratchWithMaria.com
3 tablespoons butter
about 6 cups rice krispie cereal; I like the Trader Joe's Brand as well
green food coloring
1 package dark candy coating chocolate
candy eyes; you can get these at the craft supply or online
Instructions
*Melt the butter in a large pot
*Add the marshmallows, and stir until melted
*Remove from the heat
*Add in a few drops of green food coloring, and stir until well incorporated
*Stir in the rice krispies; sometimes you need a bit more when using the homemade marshmallows
*Pour the mixture into a 9.5x13 baking sheet that has been sprayed with cooking spray to prevent the krispies from sticking
*Grease your hands with the spray, or butter, and press the krispies into the pan
*Allow to set up completely
*Once set, cut the krispies into rectangles
*Place a heat-safe bowl over a pan with a little bit of simmering water, being careful that the water doesn't touch the pan, and melt the dark candy coating chocolate in the bowl until smooth, and turn the heat off
*Dip the top part of the rectangle into the melted chocolate, using a spatula to help if needed, to create the "hair"
*Place the dipped krispies on a baking sheet lined with wax paper, and allow to set
*Repeat with all of the krispies
*Use a toothpick to place a tiny bit of melted chocolate on the back of one of the candy eyes and place on the krispie treat
*Repeat until all of the frankenstein rice krispies have two eyes, or whatever look you are looking to achieve
*Store in a sealed container
