Crispy Chickpeas With Lemon and Thyme
I am here to replace your salty afternoon snack!! I know a lot of people need that crunchy and salty fix in the afternoon so they reach for chips. These crispy chickpeas are going to be your new favorite thing. Chickpeas are a really good source of protein and fiber then paired with lemon, thyme, olive oil, and salt you not only have your healthy chip replacement, but you have something that will fill the "hungry" void! When you cook the chickpeas in the oven it makes them crunchy and wonderful. You can even put these on your salad in place of croutons. Make these⦠trust me!
Here's what you need:
1 (15 oz) can chickpeas, rinsed and drained
1 tablespoon olive oil
1 teaspoon kosher salt or sea salt
the zest of half a lemon
1 teaspoon dried thyme
*Line a baking sheet with aluminum foil
*Preheat your oven to 350 degrees
*After you drain and rise the chickpeas dry them on a towel or paper towel
*In a bowl combine all the ingredients and toss together so that the chickpeas are evenly coated
*Pour the chickpeas on the prepared baking sheet
*Bake 50-60 minutes
*Allow to cool for at least 10 minutes
These are best hot or eaten within a day
