Overnight Oatmeal with Bruleed Bananas

I am obsessed with overnight oatmeal! Truth be told, I never really understood why everyone liked it so much. I mean, it’s cold oatmeal. Well, my friends, my mind has been changed. The key for me was hemp milk. I try not to have a ton of dairy in my diet because it’s not so great for my skin. I use half and half in my coffee but aside from that, I try not to go too crazy. I also have a nut allergy, which means nut milk is out of the picture.

Enter hemp milk!

Even though it isn’t worthy enough to replace my half and half in the morning, hemp milk has been a really great replacement for dairy.

Meal prep has been key to my sanity. My husband had really invasive back surgery in December and is still on the mend, so I have to make sure he has meals readily available in the fridge at all times. When I started researching healthy “make-ahead breakfasts,” overnight oats was at the top of everyone’s list. I started recipe testing, and found it to not only be a super forgiving recipe, but also a blank canvas to add any flavors you like!

I have added all sorts of flavors to this recipe from peanut butter mixed with berry compote to the one I am going to share with you today, Bruleed Bananas! Talk about fancy!

Bruleed Banana Overnight Oatmeal

Ingredients

1/2 cup oats

1/2 cup hemp milk, or milk of choice

1 tablespoon chia seeds

1/4 teaspoon cinnamon

honey, optional for topping

banana

sugar; regular or coconut sugar

jar

Directions

Pour the oats, milk, chia seeds, and cinnamon in a jar and mix with a spoon

Cover with a lid and allow to sit overnight

In the morning, line a baking sheet with aluminum foil and turn the broiler on in the oven

Cut the banana into slices on an angle

Place the cut bananas slices on the baking sheet and sprinkle with sugar

Place the baking sheet under the broiler

TIP: make sure the rack is close to the broiler

TIP: it helps to either use a non-stick aluminum foil or spray the foil with a cooking spray so the bananans don’t stick to the foil

Watch the bananas carefully as they start to caramelize because it will happen quickly and you do not want them to burn

Once bruleed (aka the sugar begins to brown), remove the baking sheet from the oven and allow the bananas to cool until they are able to be touched

Mix the oats and top them with the bananas and a drizzle of honey
