Mint Simple Syrup
The taste of fresh mint is so refreshing! Mint is a great way to brighten up a dish like watermelon and feta salad, and it is also a great way to freshen up a cocktail. I feel very strongly about the fake taste of store-bought sweet and sour mix. It tastes like feet....yup. So, if you make your own simple syrup (which is the easiest thing ever), then you can simply mix it with fresh citrus juice, and you have your very own homemade sweet and sour mix.
If you love sweet drinks, this is a great way to add real sugar into your drink without the graininess of granulated sugar. Homemade simple syrup is a great alternative to the fake sweaters that dissolve into drinks, and it allows you to add any flavor you like, such as mint.
Mint Simple Syrup

Ingredients
1 cup water
1 cup sugar
1/2 cup fresh mint leaves
Instructions
Combine the sugar and water in a sauce pan over medium heat
Stir until the sugar dissolves and it comes to a simmer
Stir in the fresh mint leaves
Simmer on low for about 8-10 minutes; string occasionally
Allow to cool and remove the mint leaves
Store this in a sealed container and refrigerate
