Healthier Sweet Potato Brownies

It is no secret that I have a crazy sweet tooth! In an effort to not eat tons of sugar and flour on the regular, I still need something sweet that actually tastes good. These brownies, THESE BROWNIES, I’m telling you, they are so good. They are sweetened with sweet potato and maple syrup. No sugar or flour added!

Ingredients:


1/2 cup roasted sweet potatoes, mashed
1/2 cup unsweetened tahini or nut butter
1/3 cup maple syrup
1 egg, room temperature
1 tsp vanilla
1/4 cup cacao powder
1/2 tsp baking soda
1/4 teaspoon kosher salt


Directions:


Mix together the sweet potato, tahini, and maple syrup.
In another bowl, whisk together the egg and vanilla. Then, whisk that in with the sweet potato mixture.
Mix the cacao powder, baking soda, and salt together.
Stir the dry mixture into the wet.
Pour the batter into an 8x8 baking dish that had been lined with parchment paper and sprayed with cooking spray.
Bake at 350 degrees for 20-25 minutes or until set in the middle.


Tips:
I recommend roasting the sweet potato instead of boiling for the best outcome. When I tested this recipe with boiled sweet potatoes it didn’t turn out as good!

Use real maple syrup….don’t argue with me on this one.

Cacao powder can be found online and most grocery stores. I get mine at Trader Joes.

Don’t over-bake these. This goes for all brownies!

I like to store these in the fridge after they cool.
