 I saw that Taste of Home was doing a recipe contest with The Girl Scouts to find creative dessert recipes using their cookies. Everyone loves Girl Scout cookies!  Samoas have always been my favorite, but after living in apartments for years I haven't had any Girl Scouts knocking on my door to sell cookies.  Now that we have moved I was so excited when I got a knock on my door...4 boxes of cookies and I was ready to bake.

While trying to figure out what I wanted to bake with these Samoa beauties, a thought popped in my mind...my mom.  We always laugh because our favorite time to eat a cookie is first thing in the morning.  There is just something about the morning time that makes cookies so appealing...maybe it's because you aren't really supposed to have them then.  I thought that it would be really fun to enjoy these cookies for breakfast...Samoa Cookie Coffee Cake.  It's basically my dream come true, and a great reason (excuse) to have cake and cookies for breakfast.

Girl Scout Samoa Cookie Coffee Cake

Makes 1 9x9 inch coffee cake

2 cups flour (unbleached all-purpose)

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter; room temperature

1 cup sugar

2 eggs; room temperature

1 cup sour cream; room temperature

2 teaspoons vanilla

2 boxes Girl Scout Samoa Cookies

Directions

*Preheat your oven to 350 degree

*Pour all of the samoa cookies into a food processor and process until crumbled like sand but still has some larger pieces

*Pour the crumbled cookies into a separate bowl to use after you make the batter

*In another bowl mix together the flour, baking powder, baking soda, and salt in a bowl

*In another bowl measure out the sour cream

*Cream together the butter and sugar in a stand-mixer, or using a hand-mixer, until light and fluffy

*Add the eggs to the butter and sugar mixture one at a time and mix until combined

*Mix in the vanilla

*Add in the flour mixture alternating with adding in the sour cream

*Combine until just mixed (being careful NOT to over mix)

*Butter and flour a 9x9 inch baking dish

*Scoop half of the batter into the prepared dish

*Make sure to evenly spread out the batter using a knife or spatula

*Pour half of the crumbled samoa cookies over the layer of batter

*Pour the rest of the batter over the layer of crumbled samoas

*Carefully spread the batter using a knife or spatula to be sure the batter is evenly spread out

*Pour the rest of the crumbled samoa cookies over the layer of batter

*Bake for 30-40 minutes or until the center is set and a toothpick comes out clean after being inserted in the center

*After the first 20 minutes of baking place a sheet of aluminum foil over the coffee cake so that the topping doesn't burn

*Allow to cool completely
