A Rice Krispie Upgrade

Since I accomplished my mission to make homemade marshmallows without corn syrup I knew I had to do something with them!  I was curious if I could freeze them to use at another time... the good news... it worked!  I had them frozen for a couple of weeks before I decided to use them for my "Gourmet Rice Krispies"

I have a good friend who has an allergy to gluten so I wanted to be sure that I could bring her something that she was able to eat.  Here is what I did:

Gourmet Rice Krispies Ingredients:

3 Tablespoons Butter (organic is best)

*Note: These can be made with vegan butter as well

10 oz, or about 40 regular size

Homemade Marshmallows

6 Cups Organic Rice Cereal

*Butter a 13x9x2 inch pan

*Melt the butter in a large sauce pan.

*Add the marshmallows and stir until melted

*Remove from heat and add the Rice Cereal

*Stir until well combined and pour into prepared baking pan

*Once cooled, cut into whatever size pieces you like.  Mine were about 1x2 inches

*To make them extra fancy, drizzle with good quality dark chocolate
