Lemon, Mustard, and Thyme Salad Dressing
Lemon, mustard, and thyme are 3 of my favorite ingredients.
I usually just use olive oil and lemon juice on my salads, but I thought that I could make my everyday dressing a little more fun! This is lemony so feel free to use less than the recipe calls for. I like using shallots instead of regular onions for this because it has a much more mild flavor so it doesn't take over the dressing. This dressing can be used for salads, tossed with grilled or roasted veggies, or as a dipping sauce.
Here's what you need:
The juice of two lemons
1 tablespoon whole grain dijon mustard
2 teaspoons fresh thyme (1 teaspoon if using dried)
1-2 tablespoons minced shallots (depending on how much you like)
1/2 cup olive oil
salt and pepper to taste
Here's how you make it:
*Combine all of the ingredients except the olive oil in a bowl. You can also do this is a mason jar.
*If you are using a bowl whisk everything together and slowly add the oil while whisking.
*If using a mason jar you can add the oil, place the lid on tightly, and shake vigorously!
Either way works!
*Add salt and pepper to taste
