Kitchen Basics: Hard-Boiled Eggs
Hard-boiled eggs always remind me of college. They were consistently available in my sorority house and we used to mash them up with american cheese... melt them in the microwave... then mash them up some more and eat them. Believe it or not they tasted so good! I used to have them for breakfast all of the time. I can't say I'm a huge pre-sliced processed cheese fan anymore, but I do love hard-boiled eggs for a number of things.
Here's how I make them:
*Place eggs in a sauce pan and cover with cool water at least an inch over the eggs
*Bring them to a slow boil over medium to medium/high heat
*Once they hit a boil remove them from the heat and cover with the lid for about 12 minutes (depending on how large your eggs are it could be another minute or two but no longer)
*Rinse the eggs in a colander with cool water to stop the cooking
*The eggs can be stored in the refrigerator for about 3 days or peeled and eaten right away!
Perfect for egg salad sandwiches!! Yum!!
