I saw this recipe in the December issue of

Martha Stewart's

magazine, but I thought it might be a fun touch to make them green.  These cute little trees are perfect for the people in your life who have a gluten allergy, and even the ones who don't will enjoy them!  I also plan on using them for my gingerbread house that I am hoping will turn out well.... fingers crossed.

These macaroons are little pillows of coconut, sugar, and vanilla.  I used unsweetened coconut and evaporated cane juice to stay as unprocessed as possible.

This recipe is so easy!

Ingredients:

2 1/2 cups finely shredded unsweetened coconut

3/4 cup granulated sugar (I used evaporated cane juice)

2 large egg whites

(Note: if you make these on the same day as 

gingerbread

then you can use the yolks for that and the whites for these!)

5 teaspoons pure vanilla extract

Pinch of salt

Green food coloring

Confectioners' sugar for dusting

*Preheat oven to 350 degrees

*Combine the coconut, sugar, egg whites, vanilla, and salt in a large bowl.  Mix thoroughly with a either your hands or a spatula.

*Add in the food coloring and mix until well combined.

*Scoop out about two tablespoons of the mixture

*Form the shape of a tree using your hands

*Place on a parchment lined baking sheet

*Use your fingers to make the point at the top of the tree

*Bake for 12-14 minutes until the edges are golden and the tree is firm

*Let cool completely on a wire rack

*Dust with confectioners' sugar right before serving

So simple... a perfect little sweet for the holidays!
